Black Forest

The Black Forest is one of those timeless pastries that you should have tried once. It's the combination of a real chocolate sponge, fluffy whipped cream and crispy chocolate curls that has made this classic famous around the world. Getting the perfect sponge can take some trial and error. And of course, making the chocolate shell and curls requires more advanced chocolatier skills. But it's really fun. You can also decorate this cake with Callebaut's chocolate shavings: they're ready to use and add the finishing touch to the cake.

Finishing and presentation When the sponge cake has cooled, cut it into three equal parts and place a circle of sponge cake on the bottom, dip it in the kirsch syrup, place a crown of kirsch whipped cream and finish with cherries. Repeat this operation and place in the freezer for a few moments. Remove the pastry from the mould and cover it with chocolate shavings.
